He started growing it and preserving its seeds, slowly increasing the seed stock. Chewning’s passion for saving nearly extinct plant varieties extended beyond Jimmy Red Corn to other plants like beans, radishes, watermelons, and field peas. Thanks to his efforts, Jimmy Red Corn found its way back to the culinary scene.

Chef Sean Brock also received the seeds from Ted and grew the seeds himself. After a while, he started serving Jimmy Red Grits, flapjacks, and cornbread in his restaurants. Sean’s love for the flavorful corn went above and beyond. He even tattooed it on his arm.
